     I created this dish for my Grandchildren and let them decide what to call it. Sassy (Christina) 8 years old called it Southwestern Surprise and the rest agreed with her. I guess the "Surprise" came from the fact that I made it at home and surprised them with it at their home on my regular weekly visit to my second oldest daughter's home.  She has 4 children, 2 girls and 2 boys.  They can be a handful but they sure do love Grandpa Joe!

The Recipe for Southwestern Surprise...

The ingredients are as follows: 1/4 pound cajun roast beef deli meat shaved (can use regular roast beef it desired), 1/4 pound beef pastrami deli meat shaved, 1 pound bag of frozen pepper/onion mix, 2 cups water, 4 tsp. powdered beef bouillon, 2 Tbsp. flour, 2 Tbsp. olive oil, sliced jewish rye bread, thin sliced provolone cheese.

To begin heat skillet over medium heat, add olive oil. Add frozen onion/pepper mix. Stir until heated through. Add roast beef and pastrami to skillet. Heat through, stirring often. Mix bouillon powder and flour together add to skillet and stir. Add water and bring to a boil. Lower heat, cover and simmer until thickened. Stir often.

To serve: Heat oven to 425 degrees. On cookie sheet place one piece of rye bread per person, top with provolone cheese. Place in oven, remove when cheese is melted. Place bread slice on plate. Spoon Roast Beef over all. Feeds 6.

This can also be served over rice or egg noodles for a change of pace.
