My wife loves nothing better than to eat a nice warm meal, grab a warm drink and cover up with her favorite quilt (which the cat loves to lay on next to her) and read a book or watch an old movie. Try my meals for a day, grab the hot chocolate and watch your favorite movie.
Let's Get Started!
I'll just jump right in with my first meal suggestion. For a good, filling and delicious cool morning breakfast cook quick cooking oatmeal. When oatmeal is ready to serve, make it special by adding favorite fruits and flavors to it. One of ours is banana, walnuts and brown sugar with a little pat of fresh Amish made butter. We have a small glass of our favorite breakfast juice and of course for me, coffee.
For lunch on this rather cool day, let's have some blender tomato soup with open face sandwiches. To make the soup, wash, peel and chop 2 large tomatoes per person that you'll be serving, place these in the blender with 1 large chopped yellow onion and 1 large seeded and chopped green pepper. Pulse until mostly liquid but not quite all the way liquified. Pour mixture into heavy pan and add 1/2 tsp basil, 1/2 tsp oregano and salt and pepper to taste. Bring soup to a low boil, turn down heat and simmer on low for 40 minutes. While soup is cooking, preheat oven to 425 degrees. On cookie sheets, place texas toast slices, 2 for each person served. Butter lightly and place in oven until just lightly browned. Turn over and lightly butter other side, return to oven until lightly browned. Remove from oven and place your favorite deli sliced meat on one slice and favorite cheese on the other. Place back in oven until cheese is melted. Serve soup topped with grated parmesean. Drinks with lunch are at your discretion.
For dinner, lets have chicken breasts pouches. Preheat oven to 350 degrees. Take large doubled sheets of aluminum foil, one for each person served. Form into little foil pockets and place the following in each one: 1 boneless chicken breast, 1/4 cup chopped mushrooms, 1/4 cup chopped celery, 1/4 cup chopped celery, 1/2 cup peeled, thinly sliced potatoes. Cover all with 1/2 cup cream of chicken soup. Close foil tightly and place on baking pan. Bake for 50 minutes. Serve with garlic bread, a garden salad and your favorite dressing.
